Effi­cient facil­i­ties for the food indus­try

Löö­ki is a pro­duc­tion kitchen built in the Rusko indus­tri­al area in Oulu, where food is pre­pared for Oulu's schools, day­care cen­ters and the needs of the well­be­ing ser­vices coun­ty of North­ern Ostro­both­nia, that is, for approx­i­mate­ly 32,000 din­ers every day. The food pre­pared in Löö­ki is enjoyed by the patients, staff and stu­dents at the Oulu Uni­ver­si­ty Hos­pi­tal, as well as the pupils and teach­ers at schools and day­care cen­ters in the Oulu region. In addi­tion, meals are pro­duced for nurs­ing homes and day activ­i­ty units in the area and served as home deliv­ered meals. Pro­duc­ing vast num­bers of meals requires func­tion­al­ly effi­cient kitchen facil­i­ties.

A tasty pre­sen­ta­tion meets a styl­ish facade

Pro­duc­tion kitchen Löö­ki has been designed in coop­er­a­tion with an expert spe­cial­iz­ing in pro­fes­sion­al kitchens. The logis­tics of the pro­duc­tion kitchen con­sist of, among oth­er things, recipe plan­ning, receiv­ing, stor­age and pro­cess­ing of raw mate­ri­als, food prepa­ra­tion, cool­ing and pack­ag­ing, and send­ing fresh food to the con­sumers.

The start­ing point for the arrange­ment of the space was based on a cook & chill method. The method extends the shelf life of food, improves the safe­ty of the food prod­uct and increas­es the pro­duc­tiv­i­ty of the kitchen.


Löö­ki also has a sep­a­rate kitchen where spe­cial dish­es are pre­pared. The func­tion­al­ly state-of-the-art kitchen enables the chefs to ful­ly con­cen­trate on their work
